Canned artichoke hearts make this amazing and elegant appetizer easy to prepare. It is also perfect as a side dish or tossed with buttered pasta as a light dinner.

Ingredients
1 14-oz. can artichoke hearts, rinsed and drained
1-1/2 T. olive oil
1/2 t. dried thyme
1/4 t. smoked paprika
1/4 c. panko breadcrumbs
1/4 c. parmesan cheese, finely shredded
1/2 c. fresh parsley, chopped
Lemon wedges, for serving
Sea salt and black pepper, to taste
Directions
- Preheat the oven to 400° F.
- Place the artichoke hearts in a medium casserole dish and toss with the olive oil, dried thyme, and paprika. Season to taste with salt and pepper.
- Place in the oven to bake for 10 minutes.
- Remove the artichokes from the oven and sprinkle the breadcrumbs and parmesan cheese on top. Return to the oven until the artichokes are crisp and the breadcrumb topping is golden-brown another 15-20 minutes.
- Remove the artichokes from the oven and top with fresh parsley. Serve with lemon wedges and a dipping sauce of choice. Enjoy!
