Crispy Roasted Artichokes

Canned artichoke hearts make this amazing and elegant appetizer easy to prepare. It is also perfect as a side dish or tossed with buttered pasta as a light dinner.

Cook time: 30 minutes
Serves: 4


1 14-oz. can artichoke hearts, rinsed and drained
1-1/2 T. olive oil
1/2 t. dried thyme
1/4 t. smoked paprika
1/4 c. panko breadcrumbs
1/4 c. parmesan cheese, finely shredded
1/2 c. fresh parsley, chopped
Lemon wedges, for serving
Sea salt and black pepper, to taste


  1. Preheat the oven to 400° F.
  2. Place the artichoke hearts in a medium casserole dish and toss with the olive oil, dried thyme, and paprika. Season to taste with salt and pepper.
  3. Place in the oven to bake for 10 minutes.
  4. Remove the artichokes from the oven and sprinkle the breadcrumbs and parmesan cheese on top. Return to the oven until the artichokes are crisp and the breadcrumb topping is golden-brown another 15-20 minutes.
  5. Remove the artichokes from the oven and top with fresh parsley. Serve with lemon wedges and a dipping sauce of choice. Enjoy!
