- 4 cups almond milk
- 1/2 cup sugar

Instructions:
- Infuse Almond Milk with Hibiscus: In a saucepan, pour the almond milk and add the dried hibiscus flowers. Heat the almond milk over low-medium heat until it’s almost simmering, then turn off the heat and let it steep for about 15-20 minutes. Strain the almond milk to remove the hibiscus flowers and return the infused almond milk to the saucepan.
- Cook the Rice: Rinse the Arborio rice under cold water until the water runs clear. Add the rice to the infused milk in the saucepan.
- Place the saucepan over low-medium heat. Cook the rice, stirring frequently, until the mixture starts to simmer. Reduce the heat to low and let the rice cook gently, stirring occasionally, until the rice absorbs most of the milk and becomes creamy (approximately 25-30 minutes).
- Sweeten and Flavor: Add sugar and a pinch of salt to the rice pudding. Stir well to combine. Taste and adjust sweetness if necessary.
- Stir in the chopped pistachios into the rice pudding, reserving some for garnish if desired. Cook for an additional 5 minutes to allow the flavors to meld together.
- Chill and Serve: Remove the saucepan from the heat and let the rice pudding cool slightly. Then transfer it to a serving bowl or individual dishes.
