Pistachio Granola Bars

Homemade granola bars are a wonderful snack, on-the-go treat, or even for breakfast! The combination of pistachios, dried cranberries, and coconut makes them irresistible. Here’s an easy-to-follow recipe from our functional medicine Los Angeles providers.

Serves: 18-20 bars

Ingredients

2-1/4 c. rolled oats
3/4 c. shelled pistachios, roughly chopped
1/2 c. unsweetened shredded coconut
1/4 c. sesame seeds
1 c. dried unsweetened cranberries (like Craisins)
1/4 t. salt
5 T. coconut oil, melted
1/4 c. honey or agave syrup
2 t. pure vanilla extract

Directions

  1. Preheat the oven to 350° F. Line a half-sheet pan with a piece of parchment paper.
  2. Combine the oats, pistachios, coconut, sesame seeds, cranberries, and salt in a large bowl.

  4. Press the granola bar mixture into the prepared pan and smooth the top.
  5. Transfer to the oven and bake for 18-20 minutes until light golden brown.

  7. Store leftover bars in an air-tight container at room temperature for 7 days.
