🥥 Ingredients
- 1 medium cauliflower, cut into florets
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp cumin
- ½ tsp black pepper
- 1 can (13–14 oz) full-fat coconut milk
- ½ cup vegetable broth
- 1 tbsp olive oil or coconut oil
- Sea salt to taste
- Fresh cilantro (optional)
- Lime juice (optional)
🍲 Instant Pot Instructions
- Set Instant Pot to Sauté. Add oil.
- Sauté onion for 2–3 minutes until soft.
- Add garlic and ginger; sauté 30 seconds.
- Stir in curry powder, turmeric, cumin, and black pepper.
- Add cauliflower, coconut milk, and broth. Stir well.
- Seal lid. Set to Pressure Cook – High – 4 minutes.
- Quick release pressure.
- Adjust salt and finish with lime juice and cilantro if desired.
