Instant Pot Cauliflower Curry

This dish supports digestion and cellular energy by combining:

🥥 Ingredients

  1. 1 medium cauliflower, cut into florets
  2. 1 small onion, diced
  3. 3 cloves garlic, minced
  4. 1 tbsp fresh ginger, grated
  5. 1 tbsp curry powder
  6. 1 tsp ground turmeric
  7. 1 tsp cumin
  8. ½ tsp black pepper
  9. 1 can (13–14 oz) full-fat coconut milk
  10. ½ cup vegetable broth
  11. 1 tbsp olive oil or coconut oil
  12. Sea salt to taste
  13. Fresh cilantro (optional)
  14. Lime juice (optional)

🍲 Instant Pot Instructions

  1. Set Instant Pot to Sauté. Add oil.
  2. Sauté onion for 2–3 minutes until soft.
  3. Add garlic and ginger; sauté 30 seconds.
  4. Stir in curry powder, turmeric, cumin, and black pepper.
  5. Add cauliflower, coconut milk, and broth. Stir well.
  6. Seal lid. Set to Pressure Cook – High – 4 minutes.
  7. Quick release pressure.
  8. Adjust salt and finish with lime juice and cilantro if desired.
