I love meals like this because you don’t have to make one complicated dish to have something that feels special. A little hummus, some warm flatbread, fresh vegetables, olives, and a simple salad can turn into a beautiful meal that everyone at the table can pick from.
This kind of meal also reminds me that healthy food doesn’t have to look boring. You get different textures, colors, and flavors on one plate, and you can keep the ingredients simple.
Ingredients
For the Hummus
- 1 can chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons fresh lemon juice
- 1 small garlic clove
- 2 tablespoons extra virgin olive oil
- 2 to 4 tablespoons water
- 1/2 teaspoon ground cumin
- Salt to taste
For the Olive Topping
- 1/2 cup pitted Kalamata olives, finely chopped
- 1 tablespoon extra virgin olive oil
- 1 teaspoon fresh lemon juice
- 1 tablespoon finely chopped parsley
For the Platter
- Warm pita or flatbread
- Cherry tomatoes
- Cucumber slices
- Lettuce or mixed greens
- Roasted vegetables
- Fresh parsley
- Additional olives
- Lemon wedges
Directions
- Start with the hummus. Add the chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and a little salt to a food processor. Blend until smooth. Add water a little at a time until you get the texture you like.
- For the olive topping, mix the chopped olives with olive oil, lemon juice, and parsley. Let it sit for a few minutes so the flavors come together.
- Spoon the hummus onto a serving plate and make a small well in the middle. Add the olive mixture on top and drizzle with a little olive oil.
- Now comes the fun part. Arrange the warm pita, tomatoes, cucumbers, greens, roasted vegetables, and olives around the hummus.
- Serve everything together and let everyone build their own little plate.
A Simple Functional Medicine Take
What I like about a meal like this is the variety. You have chickpeas for plant-based protein and fiber, vegetables for color and nutrients, olive oil for healthy fats, and herbs and spices that bring plenty of flavor without needing a complicated sauce.
You also don’t need to make the entire platter perfectly traditional. Use the foods you enjoy and make the meal work for your household.
Sometimes eating well is simply about making real food easy enough that you actually want to sit down and enjoy it.
