Bloody Mary Poached Shrimp

This recipe brings all the favorite flavors of the Classic Bloody Mary Cocktail and turns it into a perfect main course. Ingredients:

  2. 4 medium celery stalks, finely diced
  3. 4-5 fresh garlic cloves, minced
  4. 2 large tomatoes, chopped
  5. 2 1/2 c. tomato juice, preferably low-sodium
  6. 3 T. Worcestershire sauce
  7. 2 t. hot sauce (optional)
  8. 2 lb. medium shrimp, peeled and deveined
  9. 1/2 c. fresh basil, chopped
  10. 1/2 c. fresh parsley, chopped
  11. 1 medium lemon, juiced
  12. Sea salt and black pepper. to taste

For serving: Fresh hot cooked pasta, prepared according to package directions

Directions:

  1. Heat olive oil in a large deep skillet over medium heat.

  3. Add garlic and chopped tomatoes. Increase the heat to medium-high. Cook, stirring occasionally, until the tomatoes become juicy, approximately 4-5 minutes.
  4. Pour in tomato juice, Worcestershire sauce, and hot sauce if using. Season with salt and pepper to taste. Bring the mixture to a gentle simmer, reduce heat to low, and simmer for 10 minutes.
  5. Add shrimp and continue simmering until the shrimp become pink and opaque, approximately 3-4 minutes, taking care not to overcook.
  6. Remove from heat and stir in basil, parsley, and fresh lemon juice.
  7. Taste and adjust the seasoning with more salt, pepper, or hot sauce, if needed.
  8. Serve over fresh hot pasta.
