Ingredients (Serves 2)

  1. 4 cups high-quality bone broth (chicken, beef, or turkey)
  2. 1 cup fresh or dried shiitake mushrooms (if dried, soak in warm water for 15 min before using)

  4. 4 oz whole-grain or soba noodles
  5. 2 large eggs
  6. 1 tbsp sesame oil
  7. 2 cloves garlic, minced

  9. 2 green onions, thinly sliced
  10. 1 tbsp low-sodium soy sauce or tamari
  11. Sesame seeds for garnish (optional)
  12. Fresh cilantro or parsley (optional)

Instructions

  1. Prepare the eggs:

    Bring a small pot of water to a boil. Gently add the eggs and cook for 6-7 minutes for soft-boiled yolks. Remove and place in cold water to stop cooking. Peel and set aside.

  2. Cook the noodles:

    Cook noodles according to package instructions, drain, and set aside.
