Ingredients
- 1 T. extra virgin olive oil
- 2 medium garlic cloves, minced
- 2 1/2 c. red or green enchilada sauce
- 2 c. cooked, shredded chicken
- 1/2 c. full-fat sour cream
- 1/2 c. frozen corn, defrosted
- 1 1/2 c. Monterey Jack cheese, shredded
- 1 c. Oaxaca cheese, shredded
- 8 flour tortillas
- 1/4 c. fresh cilantro, chopped
- Sea salt and black pepper to taste
Directions
- Preheat the oven to 375°F. Lightly grease a casserole dish with olive oil.
- Heat olive oil in a large skillet over medium heat. Add garlic and allow to become fragrant, approximately 1-2 minutes, as suggested by functional medicine Toluca Lake
