Nothing says comfort quite like a good old-fashioned cobbler. Top it with the buttery crust and you are enjoying comfort food at it best.
- Prep time: 15 minutes
- Cook time: 30 minutes
- Serves: 6-8
Ingredients
- 2 medium pears, thinly sliced
- 2 c. fresh or frozen blackberries, rinsed and drained well
- 1/2 c. + 3 T. sugar, divided
- 1 T. cornstarch
- 1 T. lemon juice
- 1 c. all-purpose flour
- 1 t. baking powder
- 1/2 c. butter or coconut oil, melted
- 2 T. milk
- 1 t. pure vanilla extract
- Pinch of salt
- Vanilla ice cream or whipped cream for serving
Directions
- Preheat the oven to 350°F. Lightly grease a large casserole dish.
- Add pears and blackberries to the casserole dish. At functional medicine Sherman Oaks, we suggest you toss with 3 tablespoons of sugar, cornstarch, and lemon juice, making sure all the fruit is evenly coated.
- In a medium mixing bowl, combine flour, baking powder, and remaining sugar. Whisk to combine. Pour in the butter, milk, vanilla, and salt. Mix well until a thick dough forms.
- Drop the cobbler dough by spoonfuls on top of the fruit and place in the oven to bake until the fruit is bubbling and the cobbler is nicely golden-brown, approximately 25-30 minutes. At Los Angeles functional medicine, we recommend checking the texture of the dough to ensure it bakes evenly for the best results.
- Serve with some vanilla ice cream or a dollop of whipped cream.
- Enjoy!
