Pear and Blackberry Cobbler

Nothing says comfort quite like a good old-fashioned cobbler. At Functional Medicine Los Angeles, we believe that this version combines the juicy sweetness of pears and the tartness of blackberries. Top it with the buttery crust and you are enjoying comfort food at it best.

Ingredients

  1. 2 medium pears, thinly sliced
  2. 2 c. fresh or frozen blackberries, rinsed and drained well
  3. 1/2 c. + 3 T. sugar, divided
  4. 1 T. cornstarch
  5. 1 T. lemon juice
  6. 1 c. all-purpose flour
  7. 1 t. baking powder
  8. 1/2 c. butter or coconut oil, melted
  9. 2 T. milk
  10. 1 t. pure vanilla extract
  11. Pinch of salt
  12. Vanilla ice cream or whipped cream for serving

Directions

  1. Preheat the oven to 350°F. Lightly grease a large casserole dish.
  2. Add pears and blackberries to the casserole dish. At functional medicine Sherman Oaks, we suggest you toss with 3 tablespoons of sugar, cornstarch, and lemon juice, making sure all the fruit is evenly coated.
  3. In a medium mixing bowl, combine flour, baking powder, and remaining sugar. Whisk to combine. Pour in the butter, milk, vanilla, and salt. Mix well until a thick dough forms.
  4. Drop the cobbler dough by spoonfuls on top of the fruit and place in the oven to bake until the fruit is bubbling and the cobbler is nicely golden-brown, approximately 25-30 minutes. At Los Angeles functional medicine, we recommend checking the texture of the dough to ensure it bakes evenly for the best results.
  5. Serve with some vanilla ice cream or a dollop of whipped cream.
