Salad Ingredients
> 4 c. baby spinach, rinsed and patted dry
> 1/2 red onion, thinly sliced
> 1 large orange, peeled and sliced
> 1 c. strawberries, sliced
Sea salt and black pepper, to taste
Dressing Ingredients
> 1/4 c. balsamic vinegar
> 3 T. extra-virgin olive oil
> 2 t. honey, preferably local
> 2 t. Dijon mustard

Salad Topping Ingredients
> 1/4 c. walnuts, roughly chopped
> 2 oz. goat cheese, crumbled
Directions
- Layer the spinach, red onion, orange slices, and strawberries in a large salad bowl. Season with salt and pepper to taste.
- In a small bowl, whisk together the balsamic vinegar, olive oil, honey, and Dijon mustard. Season to taste with salt and pepper.
