- 5 T cold unsalted butter, divided
- 1 small yellow onion, diced fine
- 1 stalk celery, thinly sliced
- 1-1/4 C all-purpose flour, divided
- 1 qt. low sodium chicken broth
- 2 C diced, cooked chicken
- 6 oz. frozen Italian green beans
- 6 oz. frozen peas & carrots
- 1 t baking powder
- 2 T chopped fresh parsley, plus additional to garnish
- 1/2 C milk, preferably whole
- Sea salt and black pepper, to taste
