Ingredients:

  1. 5 T cold unsalted butter, divided
  2. 1 small yellow onion, diced fine
  3. 1 stalk celery, thinly sliced
  4. 1-1/4 C all-purpose flour, divided
  5. 1 qt. low sodium chicken broth
  6. 2 C diced, cooked chicken
  7. 6 oz. frozen Italian green beans
  8. 6 oz. frozen peas & carrots
  9. 1 t baking powder
  10. 2 T chopped fresh parsley, plus additional to garnish
  11. 1/2 C milk, preferably whole
  12. Sea salt and black pepper, to taste
  13. 6 oz. frozen peas & carrots

Directions:

  1. Heat a Dutch oven over medium-high heat. Add 3 tablespoons butter and heat until melted. Add onion and celery and cook until onion is translucent, about 4 minutes.
  2. Sprinkle with 1/4 cup of flour. Cook stirring constantly to cook out the raw flour taste, approximately one minute. Gradually add broth, stirring constantly, and bring to a boil. Reduce heat and simmer for 5 minutes.
  3. Stir in the chicken and green beans and season to taste with salt and pepper.  Add frozen peas and carrots and simmer for 5 minutes
  4. While the soup is simmering, whisk remaining flour, baking powder, salt to taste and fresh parsley in a medium bowl.
  5. Add the remaining 2 tablespoons butter, using a fork to cut it into the flour mixture. Stir in milk.

  7. Cover and simmer until dumplings are cooked through, approximately 12-15 minutes depending on size.
