Salmon with Potatoes, Spinach & Onion Slices

I always have a heart for any salmon dishes, like literally any menu. Aside from being obviously healthy, the fish is so flavorful that it makes your mouth look for more. It’s tender, and of course, easy to prepare. It does not need too much effort, and it tastes good.

For this recipe, I easily paired my salmon with potatoes. You can do it fried or boiled, fresh spinach or anything available in your kitchen. The important thing is that you add some greens to it. I also added sliced red onions. You can use white onions, but I prefer red because of their flavor and a little bit of spice. A little squeeze of lemon, olive oil, and a short amount of seasoning. No need to add too much seasoning because the ingredients in the recipe are already doing it.

This is the kind of meal I would make when I want something nutritious without spending too much time in the kitchen.

Ingredients

  1. 2 salmon fillets
  2. 2 medium potatoes, cut into small pieces
  3. 2 cups fresh spinach
  4. ½ red onion, thinly sliced
  5. 2 tablespoons olive oil
  6. 2 cloves garlic, minced
  7. 1 tablespoon fresh lemon juice
  8. ½ teaspoon paprika
  9. ½ teaspoon dried oregano
  10. Salt and black pepper to taste
  11. Fresh dill or parsley, optional

Directions

  1. Heat oven until 400 degrees Fahrenheit.
  2. Combine potatoes using one tablespoon of olive oil, paprika, oregano, sea salt, pepper. Transfer mixture onto baking sheet then roast twenty minutes.
  3. Season fresh salmon portions using remaining olive oil, crushed garlic, lemon juice, salt, pepper.
  4. Remove cooked potatoes from heat. Place salmon plus thin onion rings onto said baking sheet. Roast twelve fifteen minutes until salmon proteins flake apart easily under pressure.
  5. Toss green spinach inside during the final few cooking minutes until wilted.
  6. Plate dinner portions using added lemon slices plus fresh herbs sprinkled over meals.
  7. Simple components, singular pan, wholesome meal.
