Avocado Toast with Sautéed Mushrooms & Tomatoes

There is something about a good avocado toast that makes a simple meal feel a little more special. Add warm, golden mushrooms, fresh tomatoes, and a few herbs, and you have a sandwich that feels filling without being complicated.

Ingredients

  1. 6 slices whole grain or sourdough bread
  2. 2 ripe avocados
  3. 1 cup fresh mushrooms, sliced
  4. 1 medium tomato, sliced
  5. 1 to 2 tablespoons fresh dill or parsley, chopped
  6. 1 tablespoon extra virgin olive oil
  7. 1 clove garlic, minced
  8. Salt and black pepper, to taste
  9. Fresh lemon juice

Optional Additions

  1. Red pepper flakes
  2. Baby spinach or arugula
  3. Hemp seeds
  4. A fried or poached egg
  5. Crumbled feta cheese

Directions

  1. Start by heating the olive oil in a pan over medium heat. Add the garlic and sliced mushrooms. Let them cook for a while until the mushrooms become soft and lightly browned. Season with salt and black pepper.
  2. While the mushrooms are cooking, cut the avocados in half and remove the pits. Scoop the avocado into a bowl and mash it with a fork. Add a little fresh lemon juice, then season with salt and pepper.
  3. Toast the bread until golden and firm enough to hold the toppings.
  4. Spread the mashed avocado over the toast. Add the warm mushrooms, followed by tomato slices and fresh herbs.
  5. For a stacked version like the one in the photo, add another slice of toast and repeat the layers. Finish with another slice of bread and a little fresh dill or parsley on top.
  6. Serve while the mushrooms are still warm.
