Caramelized Onion, Arugula, & Herbed Mayo Gourmet Grilled Cheese

Your favorite comfort food just got even better! Fresh sourdough bread, loaded with sweet, caramelized onions, a delicious, herbed mayo, fresh arugula and that decedent melty gruyere cheese and toasted to perfection in a hot skillet! You better make extra!

Ingredients

  • 3 T. mayonnaise
  • 1 t. fresh parsley, chopped
  • 1/4 t. dried oregano
  • 2 slices sourdough bread
  • 1 T. softened butter
  • 2 T. caramelized onions, store bought or homemade
  • 2 slices gruyere cheese
  • 1/2 c. arugula leaves, roughly chopped (or baby arugula)
  • 2 slices gouda cheese
  • 1 c. cherry tomatoes, to serve

Directions

  1. In a small bowl, combine the mayonnaise, parsley, and dried oregano.
  2. Butter the outside of the slices of sourdough bread.
