Ingredients:
1 14-oz. can lentils, rinsed and drained
2 c. baby arugula
1 English cucumber, thinly sliced
3 radishes, thinly sliced
1/2 c. parsley, chopped
2 T. fresh mint, chopped
1/4 c. pumpkin seeds
2 T. apple cider vinegar
1 T. freshly squeezed lemon juice
1 T. balsamic vinegar
1 T. extra-virgin olive oil
2 oz. feta cheese, crumbled
Sea salt and black pepper, to taste
Directions:
- In a large serving bowl, combine lentils, arugula, cucumber, radishes, parsley, mint, and pumpkin seeds.
