Ingredients:
- 2 c. Fresh Pumpkin or Butternut Squash cut into 1” cubes
- 1 c. Potato, cut into 1” cubes
- 1 lb. Chicken thighs, cut into bite-size pieces
- 1 T. Hot paprika
- 1 T. Sriracha sauce
- 1/2 t. Chili flakes
- 1/4 c. Extra virgin olive oil
- Sea Salt, to taste
For Serving: Steamed Rice & Broccoli (Optional)
Directions:
- Add diced pumpkin, potatoes, chicken, paprika, chili flakes, sriracha, and olive oil to a large bowl. Season to taste with salt. Combine well.
- Set aside and let marinate for 30 minutes in the refrigerator.
- Meanwhile, preheat the oven to 400°F.
- When ready to bake, pour the marinated chicken into a 9 x 13-inch baking dish.
- Cover with aluminum foil.
- Bake for 20 minutes. Remove the foil and bake until golden brown and tender, approximately 15-20 additional minutes.
- Remove from oven. Serve with rice and broccoli.
