Ingredients

  12. 4 cups vegetable broth (1 liter)
  13. 1 tsp dried oregano
  14. 1 tsp dried basil
  15. ½ tsp dried thyme
  16. Salt and black pepper to taste
  17. 1 handful fresh spinach or kale, chopped (or frozen spinach)
  18. Fresh parsley and grated Parmesan for serving (optional)
