How to Make It
1. Prepare the chicken
Place each chicken breast between two sheets of parchment paper and gently pound it until it is an even thickness. Season both sides with the herbs, pepper, paprika, and garlic.
2. Prepare the vegetables
Heat the olive oil in a pan over medium heat. Add the onion and peppers and sauté for about 3–5 minutes, just until they begin to soften. Add the garlic and cook for another minute.
3. Stuff the chicken
Place a small amount of the cooked vegetables in the center of each chicken breast. Add a little cheese if desired. Roll the chicken tightly around the filling.
4. Wrap with bacon
Wrap each chicken roll with 1–2 slices of bacon. Place the rolls seam-side down in a baking dish.
5. Bake
Bake at 375°F (190°C) until the chicken reaches an internal temperature of 165°F (74°C). A food thermometer is the safest way to check doneness, especially with stuffed chicken.
Let the chicken rest for a few minutes before slicing.
