Hot Cheesy Baked Tortellini

This hot, cheesy tortellini casserole is comfort food at its best. From start to finish, it will be on your table in less than an hour! Feel free to change up this recipe from our functional medicine Studio City experts, using your favorite meat sauce, adding any vegetables you have on hand, such as mushrooms or zucchini, or just like the recipe is written… simple and delicious.

Ingredients

  1. 12 oz. refrigerated cheese tortellini
  2. 1 small onion, finely diced
  3. 1/2 c. fresh parsley, chopped (reserve a small amount for finishing)
  4. 1/2 c. fresh basil, chopped (reserve a small amount for finishing)
  5. 2 c. marinara sauce, jarred or homemade
  6. 1/2 c. water
  7. 1 T. olive oil
  8. 1 1/2 c. shredded mozzarella cheese
  9. 1/2 c. shredded parmesan cheese
  10. Sea salt and black pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. In a large casserole, mix together the tortellini, onion, parsley, basil, marinara, water, and olive oil. Our functional medicine Los Angeles professionals recommend you season with salt and pepper to taste.
  3. Cover with aluminum foil and place in the oven to bake for 15 minutes.
  4. Remove from the oven, give the casserole a good mix, and cover with shredded mozzarella and parmesan.
