Mediterranean Falafel Pita Burgers

Ingredients

1 14-oz. can chickpeas, rinsed and drained
2 scallions, diced
1/2 c. fresh parsley, finely chopped
1 t. smoked paprika
1/2 t. ground cumin
2-3 T. flour
3 T. vegetable oil
Warm pita bread, for serving
Hummus, (store-bought or homemade) for serving
Fresh vegetables and pickles, for serving

Directions

  2. In a large mixing bowl, add the drained chickpeas. Using a potato masher, mash, leaving some larger chickpea chunks for texture.
  3. Add the scallions, parsley, paprika, cumin, flour, and vegetable oil.

  5. Form into 4 burger patties and transfer onto the prepared baking pan.
  6. Place in the oven to bake until golden brown and crispy on both sides, approximately 20-25 minutes, flipping once halfway through the cooking time.
