Topped with fresh peaches and delicious sweetened yogurt, these waffles make breakfast or brunch extra special! These can be made in a traditional waffle iron or baked in a silicone mold.

Serves: 4
Ingredients:
· 2 c. all-purpose flour
· 3 T. white sugar
· 1 T. baking powder
· 1/4 t. salt
· 1-3/4 c. buttermilk
· 3 T. butter, melted
· 2 t. pure vanilla extract
· 1 c. Greek yogurt
· 2 T. honey or maple syrup
· 2-3 large peaches, sliced
· Maple syrup, for serving
Directions:
1. Preheat the oven to 400° F or preheat an electric waffle iron per the manufacturer’s instruction manual.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
3. In a separate small bowl or container, whisk the buttermilk, butter, and vanilla.
4. Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms.
5. If using a silicone mold, pour one-fourth of the batter into the mold and bake until puffed and golden brown, approximately 10-15 minutes. Repeat for all 4 waffles.
6. If using a waffle iron, lightly oil the waffle iron. When the iron is hot, fill per the manufacturer’s instructions and cook until set repeating until the batter is gone.
7. In the meantime, mix the Greek yogurt with the honey or maple syrup.
8. Top the warm waffles with sweetened yogurt, fresh peaches, and a drizzle of maple syrup.
