  5. 2 Tbsp. olive oil
  6. Sea salt and black pepper, to taste
  7. 2 cups hummus (homemade or store-bought)
  8. 2 cups red cabbage, thinly sliced
  9. 1 medium cucumber, thinly sliced
  10. 2 radishes, thinly sliced
  11. ½ cup pickled red onions (or fresh red onion)
  12. 1 cup fresh parsley, chopped
  13. Pita bread or crackers, for serving

Directions:

  1. Preheat the oven to 400°F.
  2. For easy clean-up, line a large rimmed baking sheet with parchment paper.
  3. In a large bowl, toss the cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt, and black pepper to taste.
  4. Spread the florets evenly on the prepared baking sheet. Roast until fork-tender and crispy around the edges, 20–25 minutes.
  5. Spoon a large dollop of hummus onto the bottom of each serving plate. Top with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
